Dried Peppers

Any pepper can be dried!  Some peppers (with thicker walls) need to be dehydrated or oven dried. But thin-walled peppers do great air dried.

When air drying pepper you can keep them on the vine or pick individual peppers as they ripen. On the vine you simply hang the vine in a warm dry space (such as your porch, garage, or in your kitchen window). For individual peppers we like to string them by tying the stems to twine. Hang in a warm dry space with good airflow. Dry the peppers until they feel dried and can break easily (usually 3-4 weeks). Once dried store in an airtight jar in a cool dark place.

If you like crushed chili peppers or powder, then simply process them in a food processor or coffee grinder (for a finer powder). Seal in airtight container.

We also enjoy spicy pepper salts. Same process- drying and grinding, then add to a good quality kosher salt. Seal in airtight container.
